What you’ll need:
- 1 tsp olive oil
- ½ tsp butter (optional)
- 1/2 cup SOF spring onion or red onions, chopped
- ½ tablespoon cumin
- ½ teaspoon smoked paprika
- ½ garlic powder, salt + black pepper
- ¼ white cabbage, shredded
- ½ SOF green hot pepper (optional)
- ½ kohlrabi or whole one depending on the portion needed, peeled and diced into tiny squares
- ½ cup walnuts, roughly chopped
- 1 small SOF tomato, diced
- ½ SOF bell pepper, diced
- 1 lemon, juiced
- Handful dill or parsley, chopped
- Avocado mash, beetroot hummus, tahini, or sour cream as a sauce
What you’ll do:
- In a pan, add the oil and butter then sauté the kohlrabi and cabbage. After 4 minutes, add the cumin, paprika, salt, pepper, and garlic powder. Stir and leave to cook for another 5-8 on medium heat while stirring frequently.
- Integrate the hot peppers if you want a kick of heat and add your walnuts – cook for two more minutes. At the same time, in a bowl, add the tomatoes, bell peppers, onions, and herbs together with a dash of lemon juice, apple cider vinegar, salt, and olive oil.
- Warm your tortillas in the oven for a minute and prepare the tacos by adding your preferred sauce on the bottom. Add the kohlrabi and cabbage mix then garnish with a fresh veggie mix!
