What you’ll need:
- 2 tbsp olive oil
- 1 tsp butter
- 3 medium sweet potatoes, skin-on and diced into small cubes
- 1/2 SOF golden onion, diced (optional)
- 1 1/2 tsp sea salt
- 1/2 tsp ground black pepper
- 2 SOF cloves garlic, minced
- 1-2 SOF duck eggs
What you’ll do:
- Heat oil and butter in a pan/skillet over medium-high heat.
- Add the sweet potatoes cubes and onion and sprinkle with the salt and pepper. Stir to combine.
- Cover and cook for 15-20 minutes, stirring occasionally until the cubes are almost tender.
- Turn the heat to high and add the garlic, stirring to combine. Make a hole in the middle of the hash and add the eggs in the middle carefully. Cook on high for 2-5 more minutes until sweet potatoes are nicely browned and egg is cooked.
- Leave covered for two minutes without heat then serve hot with a sprinkle of dried dill.
