What you’ll need:
- 1 SOF red cabbage, cut into semi-thick steaks
- 1 ½ teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and pepper as per taste
- 1 tablespoon apple cider vinegar
- 2 tablespoons olive oil
- Pinch of fresh or dried dill
- ¾ slices of pan-fried halloumi cheese for serving
- 1 cup cooked quinoa for serving
What you’ll do:
- Heat the oven to 200C then lines a baking tray with baking parchment with a bit of olive oil.
- Place the cabbage steaks on a baking tray with a bit of olive oil, salt, and pepper.
- Bake for 20-30 minutes until steaks have a good char, at the same time, mix together a bit of olive oil, dill, mustard, honey, and vinegar then season as per taste.
- Fry the halloumi in a dry pan on medium heat for 2 minutes on each side until golden.
- To serve, place a spoonful of quinoa onto each cabbage steak, top with the halloumi then drizzle your honey mustard vinaigrette on top.
