What you’ll need:
- 2 medium SOF potatoes, peeled and grated
- Half of 1 SOF kohlrabi, peeled and grated
- 2 SOF spring onions, thinly chopped
- 2 tablespoons flour
- One egg
- 1/4 teaspoon paprika
- Pinch of salt and pepper
- Homemade mayo or store bought for serving
What you’ll do:
1. Preheat oven to 180 degrees then line a baking tray with parchment paper.
2. Put grated potatoes and kohlrabi in a clean paper towel and squeeze out as much water as you can from the potatoes.
3. Transfer to a mixing bowl where you have the beaten egg, seasoning and flour together. Mix well until everything is incorporated.
4. Try to shape your cakes as accurate as you can, place them on the baking tray then flatten each one gently with the back of a spoon.
5. Bake for 35 minutes, flipping them over midway until golden brown. Top with sauce and voila!
